A hybrid style of sparkling, this Cabernet Franc was picked early to retain acidity and freshness. Pressed with no time on the skin to create a pale bartlett pear hue. The base wine was fermented completely dry--after settled and racked, we added sugar and champagne yeast, capped it, and voila. Dry, with notes of citrus and brioche.
